The Best Vegan Mushroom Gravy
I think we can all agree when I say that gravy is the best part of a hearty meal. For as long as I can remember, I've been slathering my holiday meals with my moms gravy. Fast forward to being a vegan mom, I didn't think I'd be able to create a flavourful gravy without making it traditionally. I was wrong! This mushroom gravy will have you eating it like it's a soup LOL!
For this recipe you will need:
- cremini mushrooms
- garlic
- all purpose flour
- vegetable stock
- maple syrup
1. Sauté the Mushrooms:
Start by heating a sauce pan over medium heat. Add the avocado oil and let it warm up. Toss in the minced garlic and mushrooms, sautéing them until they become golden and fragrant, about 5 minutes.
2. Creating the Roux:
Sprinkle the flour evenly over the sautéed mushroom mixture. Stir well to combine, creating a sort of mushroomy roux. This roux will help thicken the gravy
3. Liquid Love:
Pour in the vegetable broth stirring gently to combine. The mixture will start to thicken as it simmers. Add in maple syrup and simmer for about 5-7 minutes, or until your gravy reaches your desired thickness.
4.Serve and Savor:
Pour this luscious, homemade mushroom gravy over your favorite vegan mashed potatoes, roasted veggies, or even a savory tofu dish. It's perfect for the holidays, Sunday dinners, or whenever you need a little extra comfort on your plate.

Vegan Mushroom Gravy
This vegan mushroom gravy has all the flavour and umami that you want!
Ingredients
- 2 cups cremini mushrooms
- 4 cloves garlic
- 1/2 cup vegan butter
- 2 tbsp avocado oil
- 1/2 cup all purpose flour
- 3 cups vegetable broth
- 1-2 tsp maple syrup
Instructions
- Wash and chop mushrooms into small pieces.
- Peel and mince garlic.
- In a sauce pan add avocado oil, mushrooms and garlic and saute until golden brown.
- Add vegan butter and allow to melt. Then add flour and stir until thick.
- Slowly pour vegetable broth and whisk into mushroom mixture.
- Finish off with the maple syrup and allow to simmer to let the flavours combine.
Notes
You could do white mushrooms for this recipe but cremini mushrooms bring a lot of delicious flavor!
