Alrighty friends, I don't know about you but I've seen enough high protein cottage cheese recipes that I'm about ready to lose my mind LOL! With every recipe I have watched being made I always think about how texture-wise cottage cheese can be similar to soft tofu. So this morning I was in a creative mood and decided to give it a try myself. This tofu flatbread recipe very basic and I'm sure that the flavor can be enhanced even more with the additions of a vegan yogurt or vegan sour cream to add a tangy flavor.

4 Ingredient Tofu Flatbread
Ingredients
- 1 block soft tofu
- 1/4 cup nutritional yeast
- 1 tbsp onion powder
- 1 tbsp garlic powder
Instructions
- 1. Preheat oven to 350ºF. Line a cookie sheet with parchment paper.
- 2. In a high powered blender combine all ingredients and blend until smooth. May need to stop blender and scrape sides to ensure mixture is properly mixed.
- 3. Transfer mixture to cookie sheet and spread to create the flatbread shape. Should be 1/4" in thickness.
- 4. Bake in oven for 30 minutes. Peel back parchment to avoid breaking.
- 5. Top with your favorite sandwich ingredients!
