In a bowl combine soy sauce, brown sugar, chopped ginger and garlic.
Remove tofu blocks from package and press with paper towel to absorb moisture.
Cut tofu into 1/2' cubes and place into a container with a tight lid.
Pour marinade over tofu and allow to sit overnight (preferably) or atleast 2-3 hours.
When ready to cook, separate the marinade from the tofu and strain out garlic and ginger.
Add marinade to a small saucepan and heat on stove on medium heat whisking in cornstarch until mixture thickens.
Use wooden or metal skewers and add approximately 6 cubes per skewer.
Heat up bbq to 450ºF. Place an aluminum grill tray and spray with cooking oil into the bbq to heat up.
Add tofu skewers to grill tray and cook on both sides slathering marinade on each side.
Enjoy with a side of fries and salad!
