Maui Rib Tofu Skewers

Ingredients

  • 1 1/2 cups soy sauce
  • 1/2 cup packed brown sugar
  • 2 tbsp minced ginger
  • 2 to 3 large garlic cloves crushed
  • 2 tbsp cornstarch
  • 2 blocks firm tofu

Instructions

  • In a bowl combine soy sauce, brown sugar, chopped ginger and garlic.
  • Remove tofu blocks from package and press with paper towel to absorb moisture.
  • Cut tofu into 1/2' cubes and place into a container with a tight lid.
  • Pour marinade over tofu and allow to sit overnight (preferably) or atleast 2-3 hours.
  • When ready to cook, separate the marinade from the tofu and strain out garlic and ginger.
  • Add marinade to a small saucepan and heat on stove on medium heat whisking in cornstarch until mixture thickens.
  • Use wooden or metal skewers and add approximately 6 cubes per skewer.
  • Heat up bbq to 450ºF. Place an aluminum grill tray and spray with cooking oil into the bbq to heat up.
  • Add tofu skewers to grill tray and cook on both sides slathering marinade on each side.
  • Enjoy with a side of fries and salad!
